The most earth-friendly way to dine on Earth Day Monday may be to cook at home using your own garden-grown vegetables (radishes, anyone?) Vegan restaurants might also be good bets. But several other eateries are getting in the spirit of the day, offering these foods and deals:
The eco-friendly Bon Appetit Management Company will demonstrate “one of three low-carbon, earth-friendly and delicious recipes” at 11:30 a.m. Monday, April 22 at its cafe at Starbucks headquarters in SoDo, (2401 Utah Ave. S.), among other BAMCO locations. The recipes are an almond-fruit smoothie, a cheeseless pizza, and an edamame burger with carrot-peel topping. The company is also showcasing an “Eat Low Carbon” website meant to help people figure out how to reduce, as they put it, our carbon ‘foodprint.’
In partnership with the non-profit Chef’s Collaborative organization, which is dedicated to sustainable food, several Seattle-area restaurants will serve “Earth Day” meals this week, including lunches featuring “local, wild, sustainable” ingredients at Seattle Central Community College’s Seattle Culinary Academy from April 23-26. On Monday (April 22), Ethan Stowell’s Anchovies & Olives and Bar Cotto will both have Earth Day specials, with 50% of the proceeds going to Chef’s Collaborative. (At Anchovies & Olives, the specials will be risotto with smoked Penn Cove mussels, roasted red pepper, and oregano ($16) and Neah Bay halibut with pickled cipollini onions, buttered turnips, and toasted hazelnuts ($31), at Bar Cotto they will be Bluebird farro salad with Washington grown asparagus, pickled red onion, and soft boiled egg ($9) and pizza with Salumi finnocchiona, fennel, fennel pollen, fior di latte, and pomodoro ($16). “Dig in,” as they put it — at Cupcake Royale, the April special is the “compost cupcake,” an earthy-looking chocolate cake with coconut, coffee, oats, chocolate chips, vanilla cake crumble, and (yes!) Tim’s Original potato chips. It is, in all senses of the word, crunchy. Royale has a rep for earth-friendliness year-round, though, with its committment to 66 percent locally sourced ingredients.
Wait for the weekend, when spring produce like rhubarb and pea vines are appearing at the year-round farmers market (Ballard, University District, and West Seattle) — and celebrate the first of the seasonal markets, the Broadway Farmers Market on Capitol Hill, which opened April 22 and runs 11 a.m. to 3 p.m. on Sundays.
