Locavore: Kits help you play cheese chef

By Bree Coven Brown / Special to Sunday Market

DIYcheese_400_0301Make fresh farm-style cheese in your own kitchen with Urban Cheesecraft’s DIY Cheese Kits out of Portland.

Everything you need is included in the cute cardboard carrying case: fine cheesecloth, non-GMO citric acid, cheese salt, molds, a thermometer and recipes. Just add milk and in one hour, you’re ready to eat most of the varieties.

Start with the Paneer & Queso Blanco kit, which is the easiest to make, and proceed to Mozzarella & Ricotta, Crumbly Goat Cheese & Creamy Chevre and more. Each kit makes eight batches, and one batch is nearly 2 pounds.

$25–$31 at etsy.com/shop/UrbanCheesecraft and DeLaurenti, Pike Place Market
