Broiled salmon recipe quick and easy to make

A co-worker of mine who enjoys going out salmon fishing with me in Puget Sound wanted to share a delightful seafood recipe that is very easy to prepare.

Broiled Salmon with tomato and dijon

3 tbsp Dijon mustard

2 tbsp lemon juice

2 tbsp olive oil

2 tbsp grated Parmesan cheese

1/2 tsp salt

1/2 tsp pepper

1 lb salmon, cut into 4 pieces

1 large tomato, coarsely chopped

2 tbsp chopped basil

Instructions

Preheat broiler.

Line baking sheet with foil.

Mix together mustard, lemon juice, cheese, salt and pepper. Wisk in the olive oil to make a vinaigrette Place fish on baking sheet, skin-side down and brush with 1/2 the sauce.

Add tomatoes and basil to sauce and put the rest on the salmon.

Broil 4 inches from heat until salmon is cooked, about 8 minutes.
