Grilled trout with a hint of fruitiness

Now that you’ve caught a stringer of trout it is time to start looking at a recipe to cook them up. Whether you’re on a camping trip or bringing them home this is a delightful recipe that will turn heads at the dinner table.

Grilled raspberry spiced trout

Ingredients

4 rainbow trout or kokanee fillets

1/2 cup of fresh or frozen raspberries

2 tablespoons thawed apple juice concentrate

1 tablespoon Dijon mustard

1 teaspoon cider vinegar

1/2 teaspoon paprika

1/4 teaspoon ground pepper

1 pinch sea salt

Directions

Pat fish fillets dry with paper towel.

Arrange fillets skin side down on plate.

In a bowl mix and stir raspberries, apple juice, Dijon mustard, vinegar, paprika, pepper and salt.

Brush some of the sauce onto fillets.

Place fillets skin side down on a greased grill over medium heat; close lid and cook.

About halfway through the cooking brush with sauce one more time.

Total cooking time is 10 to 12 minutes depending on thickness of fillets or until fish flakes easily with fork.
