I simply love easy to prepare fruit toppings that mix well with a baked/grilled salmon or any type of firm whitefish like halibut. With that said here is a fruit salsa that works well on just about any prepared fish.
Four ripe yellow peaches, peeled and diced
One cup of apricot or orange preserve
1/3 cup of diced red bell peppers
1/3 cup of diced green bell peppers
1/3 cup of diced red onions
1/3 cup of finely chopped green onions
One teaspoon of cilantro
One jalapeno, minced (seeds can be removed for those who don’t want it too spicy)
Mix all ingredients into a bowl, and chill for one hour before topping fish.
