Grilled salmon hash brown potatoes make for tasty side dish at breakfast

I love my first meal of the day “breakfast” and here is a twist by adding grilled salmon to crispy, crunchy, golden hash brown potatoes. Some will even substitute smoked salmon fror grilled salmon, which is just as tasty.

Ingredients

1 pound of grilled or smoked salmon

3 medium sized gold or russet potatoes, peeled and julienned

1/4 cup of freshly chopped green bell peppers

1/4 cup of freshly chopped red onions

1/4 cup of cream

3 tablespoons of grated Parmesan cheese

Four tablespoons of margarine or butter

1 teaspoon of kosher salt

1 teaspoon of pepper

2 teaspoons of vegetable oil

Instructions

In large mixing bowl add all the salmon, julienned potatoes, peppers, onions, cream, salt, pepper and cheese.

Heat oil and butter in a large frying pan over medium heat.

Once hot add the bowl of potatoes and salmon in and cook until brown for about 10 minutes.

Gently turn and cook for about another 10 minutes longer or until the potatoes are golden brown.
