Seafood Recipe of the Week targets bottomfishing season off the southern coast

The bottomfishing season off the coast has started off on an excellent note, and anglers are filling their bags with loads of fillets.

Here is a simple recipe to quickly prepare a batch of fish fillets into a tasty meal:

Crispy fried or baked fillets

1 cup of flour

1 cup milk

1 cup of cornmeal or panko or bread crumbs

2 eggs (optional)

1 teaspoon of black pepper

1 teaspoon of salt

1 teaspoon of paprika

Directions

Coat the fillets with flour, and then dip into milk or beaten eggs.

Then coat in cornmeal or panko or bread crumbs mixed with paprika, pepper and salt.

Deep fry until golden brown or if baking in oven pre-heat to 350 degrees and on greased cooking sheet bake for 20 minutes.
