Seattle chef and restaurateur Tom Douglas knows how to prepare local seafood, and is contributing some of his tasty recipes for my blog. Each of his recipes will be related to the “catch” of the week.
Many will remember Douglas for his 2005 episode on Food Network’s “Iron Chef” when he beat Masaharu Morimoto. The theme of that battle was wild salmon, and I recall that Douglas grilled his way to victory.
Douglas owns a wide variety of eateries in the Puget Sound region including Lola, Palace Kitchen, Dahlia Lounge, Dahlia Bakery, Etta’s, Serious Pie Downtown, Seatown, Brave Horse Tavern, Cuoco, Serious Biscuit, Serious Pie Westlake andTing Momo.
Tom and his wife, and business partner, Jackie Cross also purchased Prosser Farms in the lower Yakima Valley in 2006 bringing sustainable fresh produce to his restaurants.
Recipes will be posted regularly on Wednesdays now through October along with other local fish mongers, chefs, tackle shop owners and fish market owners.
