A can’t miss seafood recipe for those going clamming during the upcoming low tide series

Another series of extreme low tides will be coming up in the days ahead (lowest tide is minus-3.3 feet just before noon on Tuesday, July 3 in northern Puget Sound), and here is a simple can’t miss way to prepare a delicious bowl of sauteed steamed littleneck clams.

Be sure to have a warm baguette or sourdough bread on hand for dipping into the succulent clam nectar!

Sauteed Steamed Clams

(Yields four servings and takes less than 30 minutes)

Ingredients

3 pounds of cleaned live Manila littleneck steamer clams

4 cloves garlic, minced or crushed

1/4 cup of olive oil

Two ribs of chopped celery

1/2 teaspoon of crushed red pepper

1/2 teaspoon kosher salt

1/2 teaspoon black pepper

1 1/2 teaspoon oregano

2 tablespoons of chopped parsley

1 cup of clam juice or simply add fresh water, which will turn into nectar with all the spices

Directions

Soak the clams in clean, cold brine water for 30 minutes. Drain and scrub clams under cold running water, using a stiff brush.

Place clams, two cloves of minced garlic, two ribs of chopped celery, salt, pepper, parsley and oregano in a pot with a cover. Steam clams under medium heat in the covered pot for 10 minutes or until their shells open

Serve with grated Parmesan cheese and top with crushed red pepper.

Toast the baguette or sourdough bread in the oven and serve warm to be dipped into the clam nectar.
