Seafood Recipe of the Week serves up fresh grilled salmon tacos


Grilled salmon tacos with orange-grapefruit salsa

With the summer salmon fishing season in full swing, many are bringing home some nice slabs of fish to the dinner table. One tasty and fun way to prepare the fish for the entire family and kids just love them are salmon tacos.

Ingredients for salmon

2 pounds of fresh caught king salmon fillets

Olive oil

Kosher salt and pepper for taste

12 small corn or flour tortillas

Ingredients for salsa

One orange

Two limes

One grapefruit

Three Roma tomatoes, diced

Two avocados, peeled and diced

Small bunch of cilantro

Half of red onion

Two serrano chilis, stemmed and sliced thinly

One teaspoon of black pepper

One teaspoon of Kosher salt

Directions for grilling salmon

Turn grill on to medium heat. Brush the salmon fillets and the grill with olive oil, season fillets with Kosher salt and pepper. Grill the salmon on both sides for about 7 to 12 minutes depending on heat of grill and thickness of fillets.

Let salmon cool and pull apart into medium-sized flakes. Place tortillas on grill for about 30 seconds on each side.

Directions for salsa

Remove skin and seeds from orange, grapefruit and lime. Cut into segments and the dice into smaller pieces. Also dice the tomatoes and red onions.

Place all the vegetables and fruits into a large bowl, then add chilis, salt and pepper. Mix all the ingredients well, cover and chill in refrigerator for about 45 minutes.

Plate tortillas add chunks of fish and top with salsa. Slice lime and avocado into small wedges to serve with tacos.
